New culinary duo on the menu at Mar Hall Hotel, Golf & Spa Resort

With a multi-million-pound renovation underway, Align Partners, on behalf of Dutco, continues the repositioning of Mar Hall Hotel, Golf & Spa Resort into a luxury five-star Scottish destination with the appointment of a new Executive Head Chef and Head Pastry Chef to elevate the culinary offering at the resort.

Elevating the culinary offering at the resort, Executive Head Chef Tony Tapia (top image) joins the hotel with a wealth of experience having worked in several 3 AA Rosette restaurants including Crossbasket Castle and alongside industry icons, Rick Stein and Michel Roux Jr. Having led the menu concept development at Dakota Hotel Group, Tony is known for his creativity which he will bring to life in new menus that seek to transform the food offering at Mar Hall and elevate the dining experience.

Tony is joined by new Head Pastry Chef, Louise Campbell (pictured below). Originally from Manchester, Louise has worked in Scotland for 30 years refining her skills in collaboration with industry experts, including executive chef Michael Mizzen at Hilton Glasgow when it was the city’s first five-star hotel. Having worked at Mar Hall over a decade ago, Louise was inspired to return by the ongoing investment and the opportunity to elevate the afternoon tea and banqueting offerings using seasonal ingredients and meticulous skill.

Hidden at the heart of Mar Hall, the Cristal Restaurant warmly welcomes guests for an impeccable dining experience in the grand yet relaxed surroundings. Changing seasonally, the menus are inspired by dishes from around the world and showcase the finest Scottish produce and culinary expertise.  

Afternoon tea, served in the fabulous Grand Hall, features a mouth-watering array of delicate pastries, homemade cakes and scones with clotted cream and strawberry preserve. Guests can indulge in a glass of champagne and choose from a wide range of distinct blends of tea, imported by specialist tea suppliers from around the world.

The resort’s Bar offers a selection of beers, champagnes, cocktails and premium spirits, including an array of exceptional single malt Scotch whiskies for a pre-dinner aperitif, while a new restaurant at the Clubhouse is under development as part of the renovations.

The new food and beverage appointments form part of a string of new senior hires and industry experts across the resort, which include a new Head Concierge, Head of Golf, and Head Greenkeeper. These new appointments will unlock incredible guest activities, enhance the golf offering and elevate the overall guest experience at the resort.
